While I am partial to pork sisig, I love how Bistro Charlemagne reinvented sisig. Their Ox Sisig has bits of crunchy chicharon on top of that mushy, flavorful ox tongue/tripe bits thay perks up the flavor.
The slow-cooked meat was very tender. The crispy chicharon bulaklak toppings went well with the liver, kalamansi and mayonnaise, blending it to perfection.
One serving is good enough for 2-3 people.
